Join us for a discussion and cooking demo focusing on maternal health and iron deficiencies.

Speakers/Topics:

  • Kirsten Straughan, clinical assistant professor, program director—Nutrition Science, Kinesiology and Nutrition, UIC College of Applied Health Sciences, will discuss the importance of iron supplementation during pregnancy;
  • Mary Dawn Koenig, PhD, RN, CNM, associate professor, UIC College of Nursing, will discuss her research on a special probiotic strain that has been shown to improve iron absorption during pregnancy; and
  • Renea Lyles, instructor, UIC College of Applied Health Sciences, will provide a cooking demonstration of an iron rich meal utilizing herbs and vegetables from the UIC Nutrition Teaching Garden.
